Buffalo Chicken Sloppy Joes

I wanted to try something different other than regular Sloppy Joes. The taste of the sauce is going to play a major role in how spicy you want them. For picky and non-heat connoisseurs, this recipe is great. But if you want to add more kick, I suggest finding a hotter/spicier sauce.

Ingredients
  1. 2 tablespoons extra-virgin olive oil
  2. 2 pounds ground chicken
  3. 1 onion, chopped
  4. 1 tablespoon minced garlic, or to taste
  5. salt and ground black pepper to taste
  6. 3/4 cup chicken stock
  7. 1/4 cup hot buffalo wing sauce (such as Frank's® REDHOT Buffalo Wing Sauce), or to taste
  8. 2 tablespoons red wine vinegar
  9. 2 tablespoons brown sugar
  10. 1 tablespoon Worcestershire sauce
  11. 6 ounces cream cheese cheese, softened
  12. 8 hamburger buns, split
  13. 1/2 cup crumbled blue cheese
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat and stir in the ground chicken.
  2. Cook and stir until the chicken is crumbly, evenly browned, and no longer pink. Stir in the onion, garlic, salt and black pepper; cook until the onion has softened, about 7 to 8 minutes.
  3. Combine chicken stock, Buffalo wing sauce, red wine vinegar, brown sugar, and Worcestershire sauce in a bowl.
  4. Pour into the skillet with the chicken and add the cream cheese; simmer and stir until the cheeses have melted and everything is well combined.
  5. Serve on buns, and top with crumbled blue cheese.
